No water, or any other ingredient is added; no enzymes, processing aids or any short cuts are employed. It is just slowly prepared, pure kettle cooked pitted cherries.Where the montmorency cherry has been grown for generations, the locals attest to its ability to ease symptoms of chronic aches and pain, arthritis, and gout. A study at Michigan State University was conducted to examine how these "folk medicine" claims may be explained. They found that anthocyanins and their anlyon cyanidin, natural anti-inflammatory compounds found in the pigment of the montmorency cherry variety, is 10 times more potent than aspirin without irritating the stomach or causing kidney damage. These compound have the ability to inhibit two enzymes in the body that influence the production of the human pain hormone, prostaglandin. They also contain bioflavonoids that reduce the uric acid build associated with pain and inflammation of arthritis and gout. Montmorency cherries are a powerful source of at least 17 antioxidants that scientific researchers now agree may help fight cancer, heart disease, reduce pain, and induce restful sleep. The antioxidants found in montmorency tart cherries have been found superior to the activity of vitamins E and C. The cherries also contain the flavonoids kaempferol, isoqueritrin and quercetin that act as antioxidants as do anthocyanins, eliminating by- products of oxidative stress and thereby slow the aging process. Quercetin is one of the most potent anticancer agents ever discovered according to scientific research. Research conducted at Brunswick Laboratories, Wareham, Mass. and the Hollings Cancer Institute at the Medical University of South Carolina found that montmorency cherries contain allagic acid, a naturally occurring plant phenolic, that is known as a potent anti-carcenogenic/anti-mutagenic compound. Another compound found in montmorency cherries, perillyl alcohol, is a natural compound that is extremely powerful in reducing the incidence of cancer. According to the researcher who conducted the tests, Dr. Raymond Hohl, perillyl alcohol "shuts down the growth of cancer cells by depriving them of the proteins they need to grow." Perillyl alcohol was found up to five times more potent than the other known cancer reducing compounds at inducing tumor regression. Furthermore, Dr. Russel Reiter, University of Texas Health Science Center states "We were surprised at how much melatonin was in cherries, specifically the montmorency." "Melatonin is produced by the pineal gland at the base of the brain and controls sleepiness at night, wakefulness in daytime, and functions as an antioxidant to help the body destroy free radicals", according to the National Sleep Foundation and the Journal of American Chemical Society. Dr. Reiter further states, "Melatonin is by far the most potent of the antioxidants, much more so than vitamins C, E and A. The reason being that melatonin is both soluble in fat and water and can enter cells that many vitamins cannot."A six year long Washington State University study comparing different types of apple production recently found that organic fruit growing techniques "are not only better for the soil and the environment than their conventional chemical reliant counterpart, but have comparable yields, and for the organic system, higher profits and greater energy efficiency."
