Celery, thyme, bay leaf, parsley, marjoram.

For gravy, add 1 or 2 tbsp. cornstarch mixed in a little water to the drippings left in the pot. Cook until thick, try adding soy sauce, sour cream, dijon mustard. worcestershire sauce or dry wine for delicious variations.
