Buying and storing tips

Buy glutinous rice in the packaged grains section of grocery, health food, and specialty stores. It may also be available in bulk at your health food store; look for intact kernels that aren’t broken, scratched, or damaged.

Store rice in a cool, dry area in a sealed glass or plastic container, away from the open air and moisture.

Cooked rice can be refrigerated for up to seven days, or stored in the freezer for six months.

Glutinous rice is available year-round. Small cakes of prepared glutinous rice are a part of Japanese New Year meals; they can be found in specialty markets.

Preparation, uses, and tips

Stir the rice during its cooking time, which takes about 20 minutes. Use in preparing sushi, or as a base for creamy rice pudding.

To reheat cooked rice, for each 1 cup (200 grams) of cooked rice, add 2 tablespoons (30mL) liquid. Cover and heat four to five minutes on top of range or in oven. In a microwave oven, cook on High about 1 1/2 minutes per cup (200g).
