Dulse is reddish in color with a soft, chewy texture. It has a salty, spicy flavor that makes it a good introductory sea vegetable for beginners. Native to the North Atlantic coasts of the United States and Europe, dulse has a long history in Northern European cultures. Varieties North Atlantic dulse, which grows to between 6 and 12 inches (15 to 30cm) long, is the variety that is commonly available. In addition to dried fronds, dulse is also available in flake and powder forms for use as a condiment. Buying and storing tips Dehydrated dulse should be stored in an airtight container in a dark, dry place. Cooked dulse should be used soon after it is prepared, or be kept under refrigeration. Availability Dehydrated dulse is available year-round. Preparation, uses, and tips Dulse can be eaten right out of the package, but should be examined first to eliminate any sand or small shells. Dulse can be soaked and eaten raw in salads, or cooked quickly and added to stir-fries or vegetable or grain dishes. It is also good fried and eaten as a snack.
